#34: How to; DIY Vanilla Fudge

Had a bad day at work today? Forgot your assignment at home? Unexpected guests? Got detention for being late?

Well then, fudge yourself.

Yep, you read it right, fudge yourself.

For a good fudge you will need...

200mL sweetened condensed milk

400g Caster sugar

150mL milk (Whole milk tastes better than skimmed)

100g unsalted butter

1tsp vanilla extract/essence

Method

Step One

Get yourself a pan and add all the ingredients. Heat them on low to medium heat until the sugar is dissolved and the butter has melted.

Step Two

Once all the ingredients have been melted and dissolved, turn the heat to high and let the mixture boil away. Continuously boil and stir for about fifteen minutes.

Step Three

If you have a sugar thermometer, turn the heat off when the mixture reaches 115°C. If you don't, then place a small amount of the mix into a bowl of cold water. When you pull it out, it should be a soft ball. It should be pliable and should keep its shape when moulded. If that is the case, you are ready to move on.

Step Four

Turn the heat off and leave the fudge to cool for five minutes. Don't become impatient otherwise you might end up ruining it ;)

Step Five

While your fudge is cooling, prepare your baking tray. Grease it, line it with baking paper and grease the baking paper. This is so absolutely nothing sticks to the tray.

Step Six

Take a tray with about two centimeters of cold water and place your saucepan in it.  Using a spatula, mix the fudge continuously for a couple of minutes. You will notice that it will lose its shine and become really hard to stir. That's perfect.

Step Seven

Pour it into the prepared baking tin and smooth it out using the back of a spoon. Put it in the fridge and leave it to cool overnight. Once it is set, remove it from the tin and cut into squares.

Author's Note

If you do try this, comment how it turned out, because once I tried this and I halved the recipe and by accident I halved the half of sugar and omg it turned out nothing like it was supposed to. It was like eating condensed milk, only a solidified version. It was yum though *insert sheepish smile*.
