I went to take out trash today and I opened Pokémon Go on my way back and saw an Alolan Vulpix pop up. I encountered it and saw that its ears were a darker blue but I didn't expect it to be shiny until it shined. Then I threw a Pokeball at it thinking I could easily catch it but it jumped out and I started throwing great balls (kept attacking them) and I was afraid of it fleeing. It didn't. I caught it eventually and named it Snowy. There's also a Alolan Vulpix event in Sword and Shield and I haven't tried in that yet.
