Recipe for my jerk chicken dipping sauce. Just to be clear, after cleaning, seasoning, marinating, and cooking the chicken in the jerk pan, you dip the chicken in this sauce and replace them in the pan, for a bit. Anyways; Blend; Skellion (green onion), Onions, thyme, pimento, Green pepper ( Bell pepper) scotch bonnet pepper ( be careful with that tho), garlic, a little piece of pineapple, honey or a little sugar ( not too much this is chicken, not juice) ketchup, barbecue sauce (I know It's cheating but whatevah,) All purpose Vinegar, Maggi all-purpose seasoning, 'Badia' complete seasoning. Sometimes I cook it down sometimes I don't. I prefer it as thick as a curvey woman. Please tell me about your thoughts if you try it. I'm open to corrections and constructive criticism. Where measurements are concerned, I don't. I feel and look for how much to throw in there. Again be careful with the scotch bonnet pepper. That shit will make a grown man cry. Depending on your pain tolerance. Also, I use this when I want Barbifried chicken as well. Fry the chicken, dip it in the sauce, and bake for a little.
